Christmas in August…
and no, I’m not talking about my Baby Shower….but man, that certainly felt like Christmas!! I’m talking about two awesome holiday “plans” featured on organizedchristmas.com (part of organizedhome.com). Anyways, they have to Prep for The Holidays Plan featured on their website right now. Both tackle organizing, decluttering & cleaning your home, gift planning, shopping wrapping, christmas cards, baking and everything…I am def. going to do one of these plans. Just trying to figure out which one would be best.
Which ever one I choose I will more than likely add some baby prep steps in the calendar as well as some freezer meal prep…..and I’d probaly tackle more than scheduled at first so I can have a week or two off at delivery…Anyone game?? Starts August 30th!
31 week update!
I am doing soooooooooooo good. A little too good. Someone knock on some wood. LOL. My bout of eczema is gone thanks to the high dose of clobetasol they put me on on Wednesday. I am very, very grateful for that. That was incredibly annoying.
My baby shower was on Saturday! It was really nice. I hope all the guests had a good time and it wasn’t one of those dreaded boring showers…I really hope it was fun! It was a cupcake theme, with pink and green colors. I got almost every single thing I needed. Rob and I have a very short shopping list thanks to everyone for being soooo generous. It really is appreciated. I did manage to get 27 onesie type short sleeve shirts in size 0-3 though (8 of them were gifted to me before the shower). Soooo, if no one minds I may switch those out for some long sleeves or a larger size. LOL! Here are a few pictures from the shower:




Sooooo…what else. I’m still measuring 6 weeks ahead(???)…I was spot on until 24 weeks. Then at 24 weeks I jumped to 6 weeks to big….got an ultrasound. Everything was fine, still 6 weeks to big so they have me scheduled for another ultrasound on Sept. 3rd. So technically I measure “Ready to deliver” already. LOL. Even though my baby bump is not quite huge, it apparently will get ginormous from now until then. If it stays like this…at delivery I will measure 46 weeks. LOL.
I’ve been working on sorting and prepping the baby gear since Saturday. I have about 50% of my to-do list complete. I’d like to make an effort to get some of the harder tasks done quickly…before I’m uncomfy. So look for more stuff to be finished in the next 2 weeks.
I just had an amazing idea…..really my mind goes a mile a minute. I want to make freezer meals for after baby….and I don’t have enough freezer room…but my IN LAWS HAVE A DEEP FREEZE. HEHEHEHEHE. EVIL LAUGH.

My mom’s “Chop Suey” Recipe
Ok, this is what we had sometimes when I was growing up. My mom called it Chop Suey. But once I got to about 12 years old I realized that a) it is not chop suey and b) it wasn’t even American Chop Suey….so I was confused. When I would eat at peoples houses and they were serving “Chop Suey” I was expecting a hamburger/asian type of soup…instead I was served basically spaghetti with macaroni noodles……Which still boggles my mind that spaghetti with meat sauce….made with a different shape macaroni is called American Chop Suey. We call it spaghetti no matter what shape the damn noodle is at my house.
So, recap…

“Veronica’s a.k.a. Jenn’s Mom’s” Chop Suey

Recipe
In a large soup pot brown 1 package of lean ground beef, drain any fats if neccessary. Add to pot 10celery stalks chopped, 1 8oz. can of water chestnuts, 1 8oz. can of bamboo shoots, 1 14 oz. can of bean sprouts. Stir to combine. Add water to top of pot. More or less depending how much broth you like with your soup. I like more broth so I fill it to the top. Use soy sauce to turn your “broth” a lightshade of brown. This will flavor the water as well as season/salt your soup. Don’t use to much. Better to use less and add more as needed.
Bring to a boil. And simmer for 15, 20, 30 whatever minutes you want. I’d suggest at least 15. Serve in a bowl and top with La Choy Chow Mein Noodles (They are like little crunchy toppings).
So, as strange as it looks. It is actually quite appetizing. Rob like’s it. I liked it my whole life. Give it a whirl. I’m not sure what you should call it though. If you know what this dish is called….feel free to enlighten me.
